Enzo's Olive Cutting Board
One slab of Tuscan olive wood, pulled from the bonfire
Enzo Togneri is 66 and has worked olive wood for thirty-six years. His father Giovanni came from a hill village above Lucca, arrived in Dorset as a prisoner of war and never went home. When the frost of January 1985 killed his uncle’s grove, the dead trunks were cut and stacked to burn. Enzo drove his work van down from Dorset and filled it. The wood needed five years in the barn before it could be cut. The first board went to his mother in Poole. It is still the only thing he makes.
"A good board should see out the person who bought it. When one doesn't, it's nearly always because it was never one piece of wood in the first place."
Enzo Togneri · Blandford Forum, Dorset"Once a year I drive down to Lucca and come back through the tunnel with a van full of olive trunks. Border control stopped asking what they were for years ago. My cousins still ask."
Enzo Togneri · at the bench since 1990Chop on it every day. Put it out on Christmas Day. Let the whole family have a go. If it isn’t right — for whatever reason, or none — send it back for a full refund.

The Final Series
Message from the studio:
After forty-six years painting the Blue Ridge mountains from her window, a small stroke this past winter took the steady hand Eleanor Voss needs for the fine detail. She finished her three 2027 series — the American landscapes, the French villages, and the twelve famous-painting cats — in the last weeks the line still held. Every month is printed from an original oil painting. When these are gone, there is no reprint and no 2028.

What Enzo's customers are saying
Heavier than it looks in the pictures, and I mean that as a compliment. You set it down and it stays exactly where you put it. My old acacia board used to travel four inches every time I chopped an onion, and I was forever pushing it back with my hip. I have used this one nearly every day since July and there is not a mark on it worth mentioning.

Bought this for my daughter-in-law who hosts everything now that I have stopped. It arrived already oiled and in a box, so I did not have to do a thing to it, which is not how the last handmade thing I ordered showed up. She put cheese and grapes on it the same evening. Worth it just for her face when she got the paper off.

I hesitated for two days over the measurements because sixteen inches did not sound like much, and I have been burned before by things that looked bigger in the photo. It is bigger than my largest baking sheet and heavier than I pictured — it does not slide when I am cutting, which is half the point. Glad I did not talk myself out of it.

Ordered this mostly because I was tired of the plastic one and figured a wooden board is a wooden board. It is not. There is a dark streak that runs diagonally across the whole thing and doubles back on itself, and every person who has been in my kitchen since has picked it up. I keep it on the counter now, which I have never done with a cutting board in my life.

My last board was one of those four-strip sets from a warehouse club, thirty dollars for three. Five months and it came apart right down the middle glue line, and when it did you could see they had filled a crack with putty before it ever left the factory. I flipped this one over before I even washed it. There is nothing on the back but more wood.
