Three boards in three different woods, each with its job burned right into the edge. Nothing from the raw meat ends up in your salad, the fruit and the cheese stop tasting like onion, and no plastic gets into your food. Made by Dale Pruitt, 67, from wood that was headed for the chipper.
What one board is doing to your food
Raw meat juice runs into every knife mark. You wash the board, and most of it comes out. Most is not all.
Meat & Fish gets its own board, just as the USDA recommends. Nothing raw ever touches the salad board.

The Fruits & Vegetables board has two sides. When the words on the edge read right-side up, you’re on the fruit side. Flip it and the words stand on their head: that’s the side for onions and garlic. After every big storm, the roads around Redland are full of fallen trees, and almost all of it goes to the chipper or the burn pile. Dale has cleaned up after storms since Andrew in 1992. Now he keeps the good trunks: earleaf acacia, the first tree down in every hurricane, and oak. The reddish sapele comes as offcuts from a boat builder down the road, pieces too short for a boat and headed for the dumpster.
Three woods, three colors, so you grab the right board without reading. The rules came from his wife Carol, who ran a school cafeteria for 26 years. He burned them in.
